Since 2015 we’ve been Revitalising The art of DAYLESFORD Brewing.
The Daylesford Brewing Co was established in 2015 by partners Dave and Jessica, and was born out of their loves of beer, and of Daylesford, the town Jessica grew up in, has led Dave to and where they both call home.
Dave’s background as an environmental scientist combined with ten plus years of home brewing has instilled the knowledge and firmed his passion for making beer, to take the leap from backyard batches to a commercial volume and quality of craft beer.

The notion of giving back and reconnecting to Daylesford and it community is imperative and heartfelt for Jessica, a designer, and much of the inspiration for the brand has come from wanting to remember the rich brewing history that once dotted the Daylesford and Hepburn Springs landscape in the gold rush, and establish a new brand of beer and brewery that embraces this, and builds upon it with a traditional, yet cosmopolitan approach.
“Putting the Ale back into Daylesford” is exactly what the Daylesford Brewing Co. is all about, with our Pale Ale and Golden Ale varieties currently available in the region through local stockists and venues, and Dave and Jessica are in the process of establishing a permanent venue and brewery within Daylesford itself.
